Chocolate covered strawberries: cliche, contrived, messy. Cheesecake-filled strawberries: sophisticated, effortless, inspired. These chocolatey bites will be the holiday hit that everyone’s talking about. This recipe makes a big batch, but you can still double it to use the whole package of cheesecake mix if you’ve got a big party brewing. For best results, wait to fill the strawberries with the cheesecake filling within a couple hours of serving.
Toppings (optional): graham crumbs, Summer Berry Sweet Dip Mix
- Remove stems from strawberries, then core using a paring knife; set aside.
- Using a stand mixer or hand mixer, beat cream cheese, mix, and milk on medium until smooth, about 2 min. The mixture should look like buttercream.
- Spoon or pipe cheesecake filling into cored strawberries.
- If desired, dip open strawberry tops in toppings.
Don't throw away the strawberry cores! Put them in your freezer to save for smoothies.
Serving amount will vary based on the size of your strawberries—our serving size is based on large strawberries that you typically find pre-packaged at the grocery store. If you have access to fresh strawberries from a farmer's market, they'll likely be much smaller, which will mean more strawberries per serving!
Prep and core your strawberries ahead of time, but wait to fill them with the cheesecake mixture until the day of your party for optimal freshness!
